St. Patrick – Good News Popcorn

st patrick popcorn bagsMy parents used to treat my sis and I to flavored popcorn.  There was a small snack shop in the mall that had a variety of flavored popcorn.  My favorite was bubblegum.  It has been a long time since I’ve enjoyed that yummy treat.

st patrick popcornI decided that this was the perfect opportunity to treat my GFG to a childhood novelty of mine.

I made green lemon-lime flavored popcorn, AKA Good News Popcorn, in honor of St. Patrick.  We celebrated on Sunday despite the fact that it’s a 1st class feast in our diocese.

Patrick suffered much in Ireland and there was always the danger that he would be killed, yet the saint kept on preaching about Jesus.….How happy he was to bring the Good News of the true God to the people who once held him a slave. ~Holy Spirit Interactive

The children loved the Good News Popcorn. 

I plan on sharing the extra popcorn with my nieces.  The day-old popcorn is a bit chewy and reminds me of pink popcorn.  My kids still think it’s yummy.

Chocolate Peppermint Crinkle Cookies

cookie exchangeA friend hosted a Cookie Exchange during the first week of December for moms and daughters.  It was a great outing and jump start for Christmas baking.

Rose and I decided to try a new recipe.  We were in a chocolatey mood and liked the look of Chocolate Crinkles.  We used Bakers Royal recipe for Chocolate Peppermint Crinkle Cookies.

Rose found this to be a simple and fun recipe.  She noted that she would use less powdered sugar.   Also, we tried the Crinkles with and without peppermint.  Peppermint is the way to go!

I printed the recipe on the JOY cards for all to take home.

A tall glass of milk is definitely needed.  This is one rich cookie, just the way my kids like them!

Sugar and Spice…

We celebrated the feast day of Our Lady Guadalupe on Sat., Dec. 11 instead of Dec. 12.  Our parish was granted permission by our Bishop to move the feast day for a Solemnity and First class celebration since Our Lady of Guadalupe is the patron saint of our diocese and her original feast day fell on Gaudete Sunday (this year).

We kept it simple with a field trip to the Mexican Market and a small Our Lady of Guadalupe Tea Lunch inspired from Shower of Roses and Cottage Blessings. For dinner we had chicken tacos with rice and beans.  Rose and I made Our Lady of Guadalupe’s Crispies for dessert, a family favorite.  The Crispies are  made with a little sugar and spice and remind us of Our lady of Guadalupe.

The girls and their friends were thrilled with the bright, yummy desserts.  They had a great time looking at the ethnic dishes; cow’s tongue, “fish head with eyes” (tilapia), pig’s feet……  They decided to stick with rice and beans.

  • Flour tortillas
  • Cinnimon
  • Sugar
  • Oil

Directions:

  1. heat oil on stove
  2. mix cinnamon and sugar together
  3. cut tortilla into triangles
  4. fry tortilla wedges until crisp (fry a small amount at a time)
  5. remove tortilla wedges from oil
  6. place tortilla crisps on cooling rack, over a drip pan/cookie sheet
  7. generously sprinkle tortilla crisps with sugar/cinnamon mixture
  8. turn the crisps over and repeat step 7
  9. cool and serve

Rainbow Cupcakes

these are a wonderful reminder of st. cecilia and the colors of piety.

the rainbow cake is a family favorite.  we decided to make these JOYfilled cupcakes instead.  the inspiration can be found here.

cupcakes:

  • yellow or white cake mix 
  • icing colors

prep the cake as specified on the box.  we used 3 boxes since we had plan to bake these for  a parish girls bake sale.

divide the cake into 6 bowls.  we used a little over one cup per bowl.  add icing coloring to the bowls.  one color per bowl.  a little goes a long way.

fill the cupcake liners with the different colors.  we used a table spoon to layer the colors.

we filled the liners to the brim.  next time we’ll try filling them with less batter.rainbow cupcakes

frosting:

i always use meg’s recipe for frosting, a family fav.  it’s super easy and always tasty.

  • 2 sticks of butter at room temp
  • 1 bag of powdered sugar
  • 1 tsp vanilla extract (to taste)
  • 1 tbs milk (to desired consistency)
  1. soften the butter with a mixer to remove all lumps
  2. add 3/4 of the the bag of powdered sugar
  3. add tsp of vanilla
  4. mix
  5. add milk until it is thick enough to stand on your spatula but thin enough to spread nicely.  we like ours creamy, cool whip-like.

ice the cupcakes and decorate.  we use rainbow nerds and skittles.  they look cute and add some sweet and fruity flavor.  i think they help make the rainbow come to life.

they turned out so yummy that we decided to eat some and share some with our guests.  good thing we made 3 boxes.  there were 24 kids between the 3 families.
